When Hans Moser was visiting Salzburg, for business, private or to see the Salzburger Festspiele, his chef
always had to prepare Salzburger Nockerl for him. His coffee was served from Friedl Kainz. The fluffy sweet
pleasure represents the three mountains around Salzburg, the „Mönchsberg“, the „Kapuzinerberg“ and the
„Rainberg“. The Nockerl are always baked freshly, consisting of fine whipped eggwhite, cranberries and
powdered sugar. It takes some time to make this special dessert – so take some time to enjoy it, too. You
will not regret it!
